  • 1 large eggplant, cut into 1/2 inch slices
  • 1/2 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 2 garlic cloves, finely chopped
  • 1 teaspoon dried oregano
  • 1/4 cup fresh basil, snipped
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and freshly ground pepper to taste
  • 2 vine ripe tomatoes, seeded and chopped
  • 6 ounces fresh mozzarella cheese, chopped
  • -Fresh basil sprigs for garnish
