Ingredients

  • 1 sheet puff pastry, thawed, trimmed into a circle
  • 3 oz feta cheese, crumbled
  • 10 None cherry tomatoes, halved
  • 1 None small zucchini, thinly sliced
  • 4 slices salami, quartered
  • 1.5 oz pitted black olives
  • None None baby arugula, to serve

Directions

    Preheat oven to 400°F. Lightly grease and line a baking tray with parchment paper. Place puff pastry on prepared tray.

    In a bowl, combine feta, tomatoes, zucchini, salami and olives. Season to taste. Place in the center of pastry, leaving a 1 1/4 inch border. Pleat edges and bake for 30-35 mins, until pastry is golden brown and crisp.

    Serve topped with baby arugula.
