Mediterranean Meatballs

Ingredients
- 1 1/2 lb. lean ground beef
- 1/2 c. uncooked long grain rice
- 1/2 c. finely chopped yellow onion
- 2 eggs, separated
- 3 Tbsp. chopped parsley
- 1/4 tsp. allspice
- salt and pepper to taste
- 1/2 c. olive oil
- juice from 2 lemons
Directions

1Mix together beef, rice, onion, egg whites, parsley, allspice, salt and pepper.

2Form into 1-inch meatballs.

3Place oil into large covered frying pan.

4Add meatballs in a single layer. Barely cover with water.

5Bring to a boil and put on lid.

6Simmer meatballs until rice is tender (about 40 minutes).

7Remove meatballs to heated plate.

8Leave 3/4 cup of liquid in pan.

9Beat egg yolks in bowl.

10Add lemon juice.

11While stirring, add broth from pan.

12Return this mixture to pan and heat.

13Stir until it is thick.

14Return meatballs to pan.

15Gently heat for serving.
