Ingredients

  • 12 ounces new potatoes scrubbed and halved
  • 3 1/2 ounces green beans trimmed
  • 3 medium eggs hard boiled and shelled
  • 3 1/2 ounces black olives drained
  • 3 1/2 ounces salami cut into strips
  • 1 bunch spring onions trimmed and chopped
  • chives finely chopped, to taste
  • dressing
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • flat leaf parsley to garnish

Directions

    Cook potatoes in boiling salted water for 20 minutes. Add beans for final 3-4 minutes; drain.

    Cut eggs into wedges. Toss with all the salad ingredients. Mix together dressing ingredients and season to taste. Drizzle salad with dressing, garnish with parsley and serve.
