- 12 ounces new potatoes scrubbed and halved
- 3 1/2 ounces green beans trimmed
- 3 medium eggs hard boiled and shelled
- 3 1/2 ounces black olives drained
- 3 1/2 ounces salami cut into strips
- 1 bunch spring onions trimmed and chopped
- chives finely chopped, to taste
- dressing
- 4 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dijon mustard
- flat leaf parsley to garnish
Directions

1Cook potatoes in boiling salted water for 20 minutes. Add beans for final 3-4 minutes; drain.

2Cut eggs into wedges. Toss with all the salad ingredients. Mix together dressing ingredients and season to taste. Drizzle salad with dressing, garnish with parsley and serve.
