- 7 eggs
- 1/4 cup milk
- 2 tablespoons ricotta
- 3/4 cup roasted red peppers, drained Mezzetta Deli-Sliced, and chopped
- 1 jar marinated artichoke hearts Mezzetta, drained and chopped
- 1 tablespoon butter
- 2 tablespoons sliced green onions thinly, to garnish
Directions

1In a medium bowl, whisk the eggs, milk and ricotta together. Add the roasted red peppers and artichoke hearts into the eggs and mix together.

2In a medium sized nonstick pan on medium heat, melt the butter, then add the egg mixture. Stir frequently with a spatula until eggs are cooked to your desired doneness; about 5 minutes.

3To serve, garnish with green onions.
