- 2 whole Large Wraps Or Tortillas
- 4 Tablespoons Cilantro Jalapeno Hummus, Recipe Below
- 2 cups Shredded Lettuce Or Other Salad Greens
- 6 whole Sweet Pickled Cherry Peppers, Sliced
- 1/4 cups Shredded Carrot
- 1/4 cups Thinly Sliced Onion
- 1/4 cups Sliced Cucumber
- 1/4 cups Crumbled Feta Cheese
- 30 ounces, weight Canned Garbanzo Beans, Lightly Drained
- 1 whole Jalapeno, Roughly Chopped, Seeded If You Don't Love Spicy Things
- 1 Lemon, Juiced
- 1 clove Garlic
- 1/2 cups Cilantro Leaves And Stems
- 1/4 cups Olive Oil Plus More As Needed
- Salt To Taste
Directions

1For the wraps: Arrange one of the tortillas on a piece of foil or parchment paper.

2Spread with half of the listed amount of hummus (you will have lots leftover), then layer half of each of the other wrap ingredients on top.

3Tuck in the sides of the wrap and tightly roll up the tortilla, pushing in any stray ingredients with your fingers as you go.

4Wrap tightly in the parchment paper and use a serrated knife to cut the whole thing in half.

5Repeat with the other wrap and remaining ingredients.

6Enjoy!

7For the hummus: Combine all the ingredients in a food processor.

8Process until nice and smooth.

9Taste!

10Add more olive oil if youd like a thinner, smoother hummus, or add more salt and cilantro for flavor.
