Ingredients

  • PUDDING
  • 1 C sugar
  • 1 egg
  • 1 tbsp apricot jam
  • 1 C flour
  • 1 tsp baking soda
  • 1/4 tsp of salt
  • 1 tbsp melted butter
  • 1 tsp white vinegar
  • 1 C milk
  • SAUCE
  • 1/2 C of cream
  • 3 oz butter
  • 1/2 C brown sugar
  • 1/4 C water

    Beat sugar and egg. Add the jam, then the flour, baking soda and salt. Mix well.

    Add butter, vinegar and milk. Mix well.

    Bake at 350 covered in a glass dish sprayed with PAM for 50 minutes.

    SAUCE

    While pudding is baking, make sauce.

    Bring all ingredients to a boil. Boil for 5 minutes and then pour over cooked pudding immediately when removed from the oven.

    Serve hot/ can reheat uncovered for 15 minutes.
