- 8 lb. tripe, cut into small pieces
- 3 lb. whole hominy, washed thoroughly
- 1 ox foot
- 1 pt. red chili sauce
- 1 head garlic
- 1 bunch green onions
- 1 bunch cilantro
- salt to taste
Directions

1In one gallon of water, cook the ox foot for 2 hours in a large pot.

2Add tripe and hominy.

3Boil until tender, about 2 hours.

4Add onion, garlic, cilantro and salt to taste.

5Simmer one hour.

6Serve with hot flour tortillas or French rolls and butter.
