- 1/2 cup flour
- 1/2 teaspoon cream of tartar

1Beat egg whites until they hold their shape.

2Gradually add sugar which has been sifted with cocoa, cream of tartar, and flour.

3Add the flavoring.

4Mix just enough to obtain a uniform blend of ingredients.

5Pour into well-oiled shallow pans.

6Bake in moderate oven (350 F) about 35 minutes.

7Remove from oven and when cool put layers together with boiled icing.

8Chopped nuts or coconut may be combined with the icing.
