  • 4 None egg whites
  • 1/2 cup granulated sugar
  • 3/4 cup powdered sugar, sifted

    Preheat the oven to 250°F. Line 2 baking pans with parchment paper. Beat egg whites in a large bowl with an electric beater until soft peaks form. Gradually add granulated sugar, beating until thick and glossy. Gently fold in powdered sugar. (If desired, divide meringue into 2 bowls. Gently stir 1 tsp vanilla extract into 1 bowl and 1 tsp sifted cocoa powder into 1 bowl.)

    Shape oval meringues, using a spoon to drop mixture onto prepared pans.

    Bake for 1 1/2 hours, until crisp and dry. Turn off oven and leave meringues to cool in oven completely. Once cool, store in airtight containers.
