- 2 egg whites
- 1/8 tsp. cream of tartar
- 1/8 tsp. salt
- 1/2 c. sugar
- 1/4 tsp. vanilla or almond extract
Directions

1Preheat oven to 250°.

2Place egg whites in large mixing bowl. Beat until foamy.

3Add cream of tartar and salt.

4Beat until soft peaks are formed when beaters are pulled up.

5Add sugar a tablespoon at a time.

6Beat until smooth and satiny.

7Add extract. Mix well.

8Drop from teaspoon onto ungreased cookie sheets covered with brown paper.

9Shape into mounds the shape of a small walnut on top.

10Bake about 30 minutes.

11Makes 5 dozen.
