  • 3/4 c. chopped walnuts
  • 1 1/4 c. crushed saltine crackers
  • 2 tsp. baking powder
  • 4 egg whites
  • 1/4 tsp. cream of tartar
  • 1/2 c. sugar
  • 1 tsp. vanilla extract
  • cooking spray
  • 2 1/4 c. fat-free milk, divided
  • 1 (1.4 oz.) pkg. chocolate sugar-free instant pudding mix
  • 1 (1.3 oz.) envelope whipped topping mix
  • 1/2 tsp. vanilla extract
  • 2 Tbsp. chopped walnuts

    Combine first 3 ingredients; stir well. Beat egg whites and cream of tartar at high speed of an electric mixer until foamy. Add sugar; beat until stiff peaks form and sugar dissolves.

    Add vanilla; fold in cracker mixture. Spread in a 9-inch pie plate. Bake at 250° for 40 minutes; cool.
