- 1 large yellow onion, chopped
- 1 large red pepper, chopped
- 2 large boned chicken breasts, cut into bite-size pieces
- 1 c. mild salsa, strained
- 1 1/2 c. Colby cheese, shredded
- 1 1/2 c. Jack cheese, shredded
- 2 Tbsp. flour
Directions

1In a skillet, saute the onion and pepper in oil.

2Add the chicken pieces and saute until all juices have evaporated and the chicken is cooked.

3Transfer to a greased (sprayed with Pam) 1 1/2-quart baking dish.
