Ingredients

  • vegetable cooking spray
  • 1 lb. boneless chicken breasts, skinned and cut into strips
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (15 oz.) can Mexican style stewed tomatoes
  • 1 1/2 c. water
  • 1 c. converted rice
  • 4 tsp. chicken flavored instant bouillon or 4 chicken bouillon cubes
  • 4 Mexican blend cheese (optional garnish)

Directions

    In a large nonstick skillet, over medium-high heat, cook chicken in cooking spray until no longer pink, about 5 minutes. Add remaining ingredients; bring to a boil.

    Reduce heat, cover and simmer 20 minutes.

    Remove from heat and let stand about 5 minutes before serving.

    Garnish with optional ingredients; sprinkle with cheese.
