Mexican Bean Pot

Ingredients

  • 2 c. dried kidney beans or 4 c. cooked
  • 3 tsp. salt
  • 6 slices bacon
  • 4 Tbsp. bacon fat
  • 1 clove garlic
  • 2 tsp. dry mustard
  • 1/8 tsp. cayenne
  • 2 Tbsp. vinegar
  • 1/2 c. sweet pickle juice
  • 1/4 c. coffee
  • 6 onion slices

Directions

    Boil beans 2 minutes and soak 1 hour or overnight.

    Fry bacon half done; add fat to bean water and boil gently 2 hours.

    Drain. Mix all ingredients except bacon, coffee and onion.

    Bake 1 hour in 350° oven.

    Pour coffee over beans, bacon and onion slices. Bake 20 minutes longer at 400°.
