Mexican Beef Roll-Ups

- 10 flour tortillas (may use fat free)
- 1/2 c. sour cream (may use fat free)
- 1/4 c. mayonnaise (may use fat free)
- 3 Tbsp. hot salsa
- 1 lb. thinly sliced roast beef
- 10 large lettuce leaves
Directions

1Heat tortillas by package directions.

2Combine sour cream, mayonnaise and salsa and spread on tortillas.

3Arrange roast beef and a lettuce leaf over sauce.

4Roll tortillas in a jelly roll fashion.

5Secure with a wooden pick.

6Slice each roll in half. Serve with additional salsa.

7These are also good crisped under broiler, dipped in mustard or your choice of dip.
