Mexican Beef Sandwich Rolls

Ingredients

  • 10 to 12 farm rolls
  • 1/2 lb. lean ground beef
  • 1 small onion, chopped
  • 1/4 c. sliced olives
  • 8 oz. green chili salsa
  • 1/4 tsp. ground cumin
  • 1/2 tsp. chili powder
  • 3/4 c. Cheddar cheese, shredded
  • 3/4 c. Jack cheese, shredded
  • 1/2 lb. bacon, cooked to crisp slices

Directions

    Cut tops off rolls and scoop out insides. Brown beef and onion.

    Stir in olives, salsa, cumin and chili powder.

    Simmer 5 to 10 minutes.

    Fill each roll 3/4 full.

    Sprinkle on a layer of each cheese.

    Top with bacon slices.

    Put top on roll and wrap each roll in foil.

    Heat in 375° oven for 12 to 15 minutes.
