  • 3 cups frozen hash browns
  • 1 cup frozen corn
  • 1 can (19 fl oz/540 mL) black beans, rinsed
  • 1 red pepper, finely chopped

  • 8 eggs
  • 1-1/4 cups milk
  • 1 tsp. garlic powder
  • 1/4 tsp. cayenne pepper
  • 1/4 cup chopped fresh cilantro

Directions

    Combine first 5 ingredients in 13x9-inch baking dish sprayed with cooking spray; top with cheese.
