Mexican Casserole

Ingredients

  • 1 doz. corn tortillas
  • 3 lb. ground beef
  • 1 large onion
  • 1 green pepper
  • salt and pepper
  • 1 lb. Cheddar cheese
  • 2 cans black olives
  • 3 (15 oz.) can chili beans
  • 2 cans cream of chicken soup
  • 2 cans Ro-Tel tomatoes

Directions

    Chop onion and green pepper.

    Saute with ground beef. Generously grease a 10 x 14-inch baking dish.

    Place a layer of corn tortillas on bottom.

    Add a layer of meat mixture, then a layer of chili beans, undrained.

    Follow with a generous layer of grated cheese, then a layer of sliced black olives.

    Repeat layers until all ingredients are used.

    Spread cream of chicken soup on top, then pour Ro-Tel tomatoes over, cutting tomatoes in small pieces.

    Cover and bake at 350° until thoroughly heated, 45 minutes to 1 hour.
