Mexican Casserole

Ingredients

  • 1 lb ground beef
  • 1 garlic clove, minced
  • 1 cup chopped onion
  • 1 (14 ounce) can tomatoes
  • 4 ounces sliced black olives
  • 1 tablespoon chili powder
  • 1 12 teaspoons ground cumin
  • 2 cups shredded cheddar cheese (I also use the preshredded Mexican blend)
  • 2 cups broken tortilla chips

Directions

    Brown ground beef with onions and garlic until onions are tender.

    Drain.

    Stir in tomatoes, olives, chili powder and ground cumin.

    Bring to a boil and simmer 10 minutes.

    In a 2 quart prepared casserole, layer 1/2 meat mixture, 1 cup cheese, 1 cup crushed chips, remaining meat mixture, remaining crushed chips.

    Bake at 350 for 30 minutes.

    Top with remaining cheese and bake 5 minutes longer, until cheese is melted and browned.
