  • 1 chicken, cooked
  • 1 can Ro-tel tomatoes
  • 1 green pepper, chopped
  • 1/2 onion, chopped
  • 1 can mushroom soup
  • 1 can cream of chicken soup
  • Flour tortillas
  • 12 oz. grated cheddar cheese

    Take chicken off bones and cut into pieces. In large bowl, mix chicken, Ro-tel, soups, onion and green pepper. In 9

    X 13 pan, put a layer of tortillas on bottom, then 1/2 chicken mixture and 1/2 the cheese. Repeat layers. Bake at 350° for 40 minutes or in microwave on high for 20 minutes. Serve immediately. Top with Dorito chips, if desired.
