- 1 pkg. boneless chicken breasts, cubed
- 1 tomato, chopped
- 1 small green onion, chopped
- 1 to 2 small pickled jalapeno peppers, chopped finely
- 1 to 2 cloves garlic (minced or crushed)
- olive oil
- salt and pepper to taste
Directions

1Heat some olive oil in large frypan.

2Saute garlic and onion until tender.

3Add tomato and pepper and saute a few minutes longer on medium-low heat.

4Remove from pan and reserve juice and all. If necessary, add more oil to pan.

5Add chicken, salt and pepper; saute until cooked through and golden brown.

6Add vegetable mixture back to pan.

7Stir together with chicken and heat through. Serve with rice.
