  • 1 pkg. boneless chicken breasts, cubed
  • 1 tomato, chopped
  • 1 small green onion, chopped
  • 1 to 2 small pickled jalapeno peppers, chopped finely
  • 1 to 2 cloves garlic (minced or crushed)
  • olive oil
  • salt and pepper to taste

Directions

    Heat some olive oil in large frypan.

    Saute garlic and onion until tender.

    Add tomato and pepper and saute a few minutes longer on medium-low heat.

    Remove from pan and reserve juice and all. If necessary, add more oil to pan.

    Add chicken, salt and pepper; saute until cooked through and golden brown.

    Add vegetable mixture back to pan.

    Stir together with chicken and heat through. Serve with rice.
