Mexican Cinnamon Rolls

- 1 loaf white bread
- 8 oz. cream cheese
- 1 egg yolk
- 1 1/4 c. sugar
- 1/2 c. butter or margarine, melted
- cinnamon to taste
- dash of vanilla
Directions

1Preheat oven to 400°.

2Cut crust off of bread and roll out each slice with rolling pin until flat; set aside.

3Mix together cream cheese, egg yolk and 1/4 cup sugar until well blended. Spread onto bread slices and roll them up into rolls.

4In small bowl mix together 1 cup sugar and enough cinnamon to your liking; roll bread rolls into butter and then into the cinnamon/sugar mixture.

5Bake on cookie sheet at 400° for 20 minutes.

6(Can also be put in freezer with cookie sheet until ready to bake.)
