  • 1 Tbsp. oil
  • 1 minced onion
  • 3 c. corn (fresh, frozen or canned)
  • 2 c. tomato puree
  • 2 Tbsp. chili powder or 1/2 c. diced green chile
  • 2 Tbsp. butter
  • salt and pepper

Directions

    Saute onion in hot oil until golden yellow.

    Mix together remaining ingredients.

    Add onion.

    Pour into a buttered casserole.

    Bake 1 hour at 350°.
