- 1 c. yellow corn meal
- 3 whole eggs
- 1/2 c. onion, chopped
- 1 1/2 c. Cheddar cheese, shredded
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1/3 c. bacon drippings
- 1 c. milk
- 1 small can Mexicorn
- 3 to 4 chopped jalapeno peppers (use according to taste)
- 1/2 tsp. baking soda
- 1/2 tsp. sugar
Directions

1Mix all dry ingredients, then add other ingredients, ending with bacon fat.

2Use an iron skillet if you have one.

3Bake at 350° for 45 minutes.
