- 1/2 lb. Cheddar cheese
- 1 medium onion, chopped
- 2 to 3 jalapeno peppers
- 1 lb. ground beef
- 1 c. yellow cornmeal
- 2 eggs
- 2 c. creamed corn
- 1 c. milk
- 1/2 c. bacon drippings
- 3/4 tsp. salt
- 1/2 tsp. soda
Directions

1Grate Cheddar cheese; chop onion and jalapeno peppers; brown beef and drain well.

2Mix and set aside: cornmeal, eggs, corn, milk, bacon drippings (very essential for flavor), salt and soda. Preheat oven to 325°.

3Grease bottom of cast-iron skillet; cover bottom with corn meal and brown slightly on top of stove.

4Pour 1/2 batter into skillet; layer cheese, meat, onions and peppers. Cover with remaining batter and bake 45 to 50 minutes.
