  • 1 1/2 c. self-rising corn meal
  • 1/2 c. self-rising flour
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 3 eggs, beaten
  • 1 c. buttermilk
  • 1 c. grated sharp Cheddar cheese
  • 1 can creamed corn
  • 1 tsp. salt
  • 3/4 c. oil

    Bake at 350° to 400° for about 35 to 45 minutes.
