Mexican Corn Bread

  • 2 lb. hamburger
  • 1 large chopped onion
  • 1 lb. grated Longhorn cheese
  • 1 c. yellow corn meal
  • 1/2 tsp. baking soda
  • 3/4 Tbsp. salt
  • 1/2 c. oil
  • 1 c. milk
  • 2 eggs, well beaten
  • 1 can yellow cream-style corn
  • red peppers (optional)

Directions

    Brown hamburger and onion and drain off the grease.

    Set aside.

    In a mixing bowl, mix corn meal, soda, salt, oil, milk, eggs and corn.

    In an iron skillet, pour 1/2 corn meal mix batter. Put meat mixture on top, then sprinkle all the cheese.

    Pour remaining corn meal batter on top.

    You can sprinkle red peppers over the meat mixture if you like.

    Bake at 350° until golden brown.
