- 1 lb. ground beef
- 1 c. cornmeal
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs, well beaten
- 1 c. milk
- 1 (8 3/4 oz.) can cream-style corn
- 1/3 c. vegetable oil
- 1/2 c. shredded Cheddar cheese
- 1 small onion, chopped
- chopped jalapeno pepper to taste
Directions

1Brown beef; drain fat.

2Combine next 7 ingredients.

3Heat a large iron skillet and pour half the mixture into it.

4Layer beef, cheese, onions and peppers over mixture.

5Pour the remaining mixture on top.

6Bake at 350° for 50 minutes.

7Yields 4 to 6 servings.
