Mexican Corn Bread

  • 1 c. butter
  • 1 c. sugar
  • 4 eggs
  • 1 (4 oz.) can diced green chilies
  • 1 (16 oz.) can creamed corn
  • 4 tsp. baking powder
  • 1/2 c. grated Monterey Jack cheese
  • 1/2 c. grated Cheddar cheese
  • 2 tsp. bacon onion seasoning
  • 1 c. sifted flour
  • 1 c. sifted yellow corn meal

Directions

    Cream butter and sugar; add eggs one at a time, mixing well after each addition.

    Add chilies, corn, cheese, and bacon onion seasonings; blend well.

    Sift together flour, corn meal and baking powder.

    Add to corn mixture, blend well.

    Pour into greased and floured 12 x 8 x 2-inch baking dish; preheat oven to 350°.

    Reduce oven to 300° when ready to cook corn bread.

    Bake for 1 hour. Makes 12 squares (3 x 2 1/2-inch.
