Mexican Corn Bread

- 1 c. butter
- 1 c. sugar
- 4 eggs
- 1 (4 oz.) can diced green chilies
- 1 (16 oz.) can creamed corn
- 4 tsp. baking powder
- 1/2 c. grated Monterey Jack cheese
- 1/2 c. grated Cheddar cheese
- 2 tsp. bacon onion seasoning
- 1 c. sifted flour
- 1 c. sifted yellow corn meal
Directions

1Cream butter and sugar; add eggs one at a time, mixing well after each addition.

2Add chilies, corn, cheese, and bacon onion seasonings; blend well.

3Sift together flour, corn meal and baking powder.

4Add to corn mixture, blend well.

5Pour into greased and floured 12 x 8 x 2-inch baking dish; preheat oven to 350°.

6Reduce oven to 300° when ready to cook corn bread.

7Bake for 1 hour. Makes 12 squares (3 x 2 1/2-inch.
