Mexican Corn Bread

  • 1 c. corn meal (plain)
  • 2 eggs
  • 1/2 tsp. soda
  • 3/4 tsp. salt
  • 1 can creamed corn
  • 1 c. milk
  • 1/2 c. bacon grease
  • 2 to 4 large jalapenos, chopped
  • 1 lb. ground meat
  • 1 chopped onion
  • 2 c. cheese

Directions

    Mix browned meat and onions and set aside.

    Mix first eight ingredients together, then pour 1/3 of cornbread mixture in pan. Place meat and cover with rest of mix.

    Top with cheese.

    Bake in 400° oven in approximately 13 x 9-inch pan for 25 to 30 minutes. Serves 12.
