- 1 Tbsp. corn oil
- 1 can whole kernel corn
- 1 can Mexican hot relish or 1 can Ro-Tel, drained
- 3 eggs
- 2 c. self-rising corn meal
- milk (to desired consistency)
- grated Cheddar cheese
- 1 lb. sausage
Directions

1In a large bowl, mix corn, relish and eggs.

2Add corn meal gradually; add milk to desired consistency.

3Add 1 tablespoon oil. Brown 1 pound sausage.

4Add to corn meal mixture.

5Pour half of mixture into greased 9 x 13-inch pan.

6Spread with grated cheese, then pour on other half of mixture.

7Bake at 375° until golden brown or until done in center.
