Mexican Corn Bread

  • 1 Tbsp. corn oil
  • 1 can whole kernel corn
  • 1 can Mexican hot relish or 1 can Ro-Tel, drained
  • 3 eggs
  • 2 c. self-rising corn meal
  • milk (to desired consistency)
  • grated Cheddar cheese
  • 1 lb. sausage

Directions

    In a large bowl, mix corn, relish and eggs.

    Add corn meal gradually; add milk to desired consistency.

    Add 1 tablespoon oil. Brown 1 pound sausage.

    Add to corn meal mixture.

    Pour half of mixture into greased 9 x 13-inch pan.

    Spread with grated cheese, then pour on other half of mixture.

    Bake at 375° until golden brown or until done in center.
