  • 1 lb. ground beef
  • 1 c. sweet milk
  • 2 eggs, well beaten
  • 3/4 tsp. salt
  • 1 large onion, chopped
  • 1/2 lb. grated Cheddar cheese
  • 1 c. cornmeal
  • 1 can cream-style corn
  • 1 1/2 tsp. soda
  • 1/4 c. bacon drippings
  • 2 jalapeno peppers, chopped

Directions

    Saute ground beef; set aside.

    Combine peppers, onion and cheese.

    Combine soda, salt, cornmeal, milk, corn and eggs. Grease iron skillet and heat.

    Sprinkle small amount of meal in skillet and brown lightly.

    Pour 1/2 batter into hot skillet. Sprinkle cheese evenly over batter.

    Pour meat and onion mixture over this.

    Pour remaining batter over all.

    Bake at 350° for 45 to 50 minutes.
