Mexican Corn Bread

  • 1 1/2 c. self-rising meal
  • 1 small can creamed corn
  • 1 1/2 c. finely chopped onion
  • 1 c. shredded sharp Cheddar cheese
  • 1/4 tsp. salt
  • 1 lb. ground beef
  • 3 pods jalapeno peppers, chopped
  • 3 eggs
  • 1/2 c. Wesson oil
  • 1/2 c. milk
  • 1 pkg. taco sauce mix

Directions

    Brown ground beef with taco sauce mix. Drain. Mix rest of ingredients and pour 1/2 of the mixture into a 2-quart casserole dish.

    Spread meat mixture on that.

    Pour remaining half of corn bread mixture on top of meat. Bake at 350° for 1 hour.

    Invert on plate and serve hot.
