- 1 c. self-rising meal
- 1 c. sour cream
- 2 eggs, beaten
- 1/3 c. shortening
- 1/4 c. bacon bits
- 4 hot peppers, seeded, chopped
- 1 can whole kernel corn, drained
- 1/4 lb. sharp cheddar cheese, grated
Directions

1Make a well in center of meal.

2Add beaten eggs, sour cream, shortening, then corn, mix well.

3Pour 1/2 of batter into greased skillet.

4Add grated cheese and peppers.

5Now cover with rest of batter.

6Sprinkle with bacon bits.

7Cook at 375 degrees 30 to 40 minutes until brown.
