  • 2 eggs
  • 2/3 c. oil
  • 1 c. buttermilk
  • 1 small can cream-style corn
  • 3 Tbsp. chopped sweet green or red peppers
  • 1 1/2 c. self-rising meal
  • 2 chopped jalapeno peppers
  • 1/2 c. grated cheese

Directions

    Mix all except cheese.

    Preheat oven to 375° and grease large skillet.

    Pour 1/2 of mixture in pan.

    Add 1/2 cheese. Pour rest of mixture on top and add cheese.

    Bake about 50 minutes.
