Mexican Corn Bread

  • 2 c. self-rising corn meal
  • 2 eggs
  • 1 c. buttermilk
  • 1/4 c. bacon grease or oil
  • 3 jalapeno peppers
  • 1 can creamed corn
  • 1 large link pepperoni, cut or diced
  • 1 lb. grated Cheddar cheese
  • 1 onion, chopped

Directions

    Mix dry ingredients.

    Add bacon grease, corn and buttermilk. Add pepperoni, jalapeno pepper and onion.

    Beat eggs slightly and add to mixture.

    Put 1/2 of mixture into well greased pan. Sprinkle with 1/2 cheese.

    Pour the remaining mixture in pan and remaining cheese on top.

    Bake at 350° for 1 hour or until done in a 9 x 13-inch pan.
