- 1 c. white cornmeal (self-rising)
- 2 eggs, slightly beaten
- 1 c. buttermilk
- 1 small El Chico green chilies, chopped
- 1/4 c. corn oil
- 1 medium onion, grated
- 1 small can cream-style corn
- 1 c. grated cheese (Cheddar cheese)
Directions

1Mix meal, eggs, oil, onion, buttermilk, corn and chili pepper. Pour half the batter into greased 10-inch skillet.

2Sprinkle half of cheese over batter.

3Pour in remaining batter and sprinkle remaining cheese on top.

4Bake in oven at 425° for 25 minutes.
