  • 1 1/2 c. corn muffin mix
  • 1/2 c. milk
  • 2 eggs
  • 1 (12 oz.) can corn
  • 1 1/2 c. grated Cheddar cheese
  • 1/3 c. chopped green chilies
  • 3 Tbsp. salsa

Directions

    Blend muffin mix, milk and eggs. Add corn, cheese, chilies and salsa. Blend. Spread into lightly buttered iron skillet. Bake at 400° for 45 minutes.
