Ingredients
- 2 c. self-rising cornmeal
- 1 c. self-rising flour
- 1 Tbsp. sugar
- 1 tsp. salt
- 2/3 c. cooking oil
- 1/2 c. buttermilk
- 1/2 c. water
- 1 large can Mexicorn
- 1 c. grated cheese
- 4 eggs
- 1 large onion, chopped fine
- 1 bell pepper, chopped
- 3 or 5 jalapeno peppers, chopped fine
Directions

1In large bowl, combine dry ingredients.

2Add pepper and onion, mixing well.

3Add eggs and oil.

4When well mixed, add corn, milk and water.

5Stir well.

6Pour 1/2 of mixture into a large pan or skillet.

7Add cheese.

8Pour on rest of bread mixture.

9Bake at 450° until brown.

10If desired, leave out jalapeno peppers.
