Mexican Corn Bread

  • 2 c. self-rising corn meal
  • 2 c. milk
  • 2 eggs
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 can cream-style corn
  • 1 lb. ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 to 2 jalapeno peppers, chopped
  • 2 c. shredded Cheddar cheese

    Mix first 6 ingredients together well.

    Brown ground beef in a skillet.

    Drain.

    In iron skillet, layer bottom with 1/2 of corn meal mixture.

    Top with ground beef, onion and bell pepper.

    Add jalapeno peppers, and top with shredded cheese.

    Add remaining corn meal mixture and bake at 375° for 55 minutes.
