Mexican Corn Bread

- 1 can Mexicorn or creamed corn
- 1 medium onion
- 1 3/4 c. corn meal
- 1/2 c. flour
- 1 tsp. garlic salt
- 1 egg
- 2 Tbsp. oil
- 1/4 c. milk
- 1 pkg. Cheddar cheese
Directions

1Mix all dry ingredients together.

2Stir in chopped onion in small bowl.

3Beat egg, milk, oil and canned corn together.

4Add to dry mixture and mix well.

5Lightly grease medium baking dish or iron skillet.

6Add 1/2 mixture to baking dish.

7Add package of Cheddar cheese to top of mixture and spread out evenly, then add the rest of corn bread mixture.

8Bake for 1 hour at 350°.

9Let cool, then cut.
