- 1 c. corn meal
- 1/2 tsp. soda
- 3/4 tsp. salt
- 1 c. milk
- 1/4 c. bacon drippings or oil
- 2 eggs
- 1 large can creamed corn
- 1 small can jalapeno peppers, chopped
- 1 large onion, chopped
- 1/2 lb. sharp Cheddar cheese
Directions

1Mix together the corn meal, soda and salt.

2Mix together the milk, bacon drippings or oil, eggs and corn.

3Combine both mixtures.

4Mix together the peppers, onion and cheese.

5Pour half the batter in greased pan and put the peppers, onion and cheese in the middle.

6Pour the rest of the batter on top.

7Bake at 350° for 45 minutes until done.
