  • 1 1/2 c. corn bread mix
  • 1 c. cream-style corn
  • 1/2 c. grated onion
  • 1 c. grated Cheddar cheese
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 3 eggs
  • 1/2 c. oil
  • 1 small can jalapeno peppers, chopped (about 1/2 c., optional)

Directions

    Heat oven to 350°.

    Mix together corn bread mix, salt and baking powder.

    Beat in eggs, oil and corn; add onion, cheese and peppers.

    Pour into greased 9 x 9-inch pan.
