- 1 1/2 c. corn bread mix
- 1 c. cream-style corn
- 1/2 c. grated onion
- 1 c. grated Cheddar cheese
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 3 eggs
- 1/2 c. oil
- 1 small can jalapeno peppers, chopped (about 1/2 c., optional)
Directions

1Heat oven to 350°.

2Mix together corn bread mix, salt and baking powder.

3Beat in eggs, oil and corn; add onion, cheese and peppers.

4Pour into greased 9 x 9-inch pan.

5Bake 30 minutes or until toothpick inserted in center is clean.
