  • 1 1/2 c. cornmeal
  • 2 eggs
  • 1 (8 oz.) sour cream
  • 1 c. cream corn
  • 2 jalapeno peppers, chopped
  • 2 Tbsp. chopped bell pepper
  • 2 Tbsp. baking powder
  • 1 tsp. salt
  • 2/3 c. oil
  • 1 c. grated Cheddar cheese

Directions

    Combine all ingredients except cheese.

    Pour 1/2 of batter into well greased iron skillet.

    Put 1/2 of cheese on the batter. Pour remaining batter into pan and add remaining cheese on top. Bake in 350° preheated oven for 30 to 40 minutes.
