- 1 1/2 c. cornmeal
- 2 eggs
- 1 (8 oz.) sour cream
- 1 c. cream corn
- 2 jalapeno peppers, chopped
- 2 Tbsp. chopped bell pepper
- 2 Tbsp. baking powder
- 1 tsp. salt
- 2/3 c. oil
- 1 c. grated Cheddar cheese
Directions

1Combine all ingredients except cheese.

2Pour 1/2 of batter into well greased iron skillet.

3Put 1/2 of cheese on the batter. Pour remaining batter into pan and add remaining cheese on top. Bake in 350° preheated oven for 30 to 40 minutes.
