  • 1 c. yellow cornmeal
  • 1 c. sweet milk
  • 2 eggs, beaten
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 1 (No. 303) can cream-style corn
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 4 jalapeno peppers, chopped

Directions

    Saut the meat, onion and peppers. Grease iron skillet and sprinkle bottom with cornmeal, then pour in 1/2 cornbread mixture. Top with 1/2 pound rat cheese (grated), then add meat mixture and top with remaining cornmeal mixture. Cook at 350° for about 50 to 60 minutes.
