- 1 1/2 c. meal
- 1/2 c. flour
- salt and pepper
- 2 eggs
- 1 (16 oz.) can cream-style corn
- 2 c. Cheddar cheese
- 2 to 3 jalapeno peppers, chopped
Directions

1Preheat oil in an iron skillet until hot.

2Mix remaining ingredients except the cheese.

3Pour half the batter in iron skillet.

4Sprinkle 1 cup of cheese on top of batter.

5Pour remainder of batter on top of cheese.

6Sprinkle remainder of cheese in middle of batter.

7If sprinkled on edges cheese will burn.

8Bake at 350° for 30 to 35 minutes.
