  • 2 c. yellow cornmeal
  • 2 cans cream-style corn
  • 3 c. grated Longhorn cheese
  • 3/4 c. milk
  • 2 large cans green chilies, chopped
  • 4 eggs
  • 2 tsp. salt
  • 1/3 c. oil
  • 1/2 tsp. baking powder

Directions

    Mix cornmeal, baking powder and salt.

    Add milk, beaten eggs, oil, creamed corn, chilies and 1 1/2 cups of cheese.

    Put in buttered 9 x 5 x 3-inch pan.

    Top with remaining cheese.

    Bake at 375°, uncovered, for 45 minutes or until done.
