  • 1 lb. ground beef, browned and drained in colander
  • 1 medium onion, chopped
  • 1/2 lb. Cheddar cheese, grated
  • 2 or more jalapeno peppers, as desired
  • 1 c. yellow corn meal
  • 1/2 tsp. soda
  • 2 eggs
  • 1/2 c. drippings or oil
  • 1 c. milk
  • 1/2 tsp. salt
  • 1 can cream-style corn

Directions

    Mix first 4 ingredients and set aside.

    Mix remaining ingredients together and pour 1/2 of the batter to edges of pan. Pour in first mixture to 1 inch from sides and top with remaining batter.

    Bake 40 to 45 minutes at 350°.
