  • 1 c. self-rising cornmeal
  • 1 can creamed corn
  • 1 small can green chili peppers, chopped
  • 1 small onion, chopped
  • 2 eggs
  • 2 Tbsp. oil
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 c. cheese, grated
  • 1 tsp. salt
  • 1 c. sour cream

Directions

    Mix eggs, sour cream, chili peppers and onion. Mix dry ingredients. Combine the mixtures. Grease and heat skillet in 350° oven. Pour 1/2 mixture into skillet. Add shredded cheese. Add remaining mixture. Bake at 350° for 30 to 35 minutes.
